Egg and Sausage Breakfast Casserole

We live about five hours from our families, so that means our visits are at least several days at a time, which means we get to enjoy some of Mom's delicious breakfasts!
This is a great casserole she makes when we're there.

Here's the recipe she uses:

1 lb. sausage (Jimmy Dean is my favorite)
6 eggs
2 cups of milk
1 tsp. salt
1 tsp. dry mustard
4 slices of bread, torn into small pieces
2 cups shredded cheddar cheese

Directions:
Cook sausage. Drain.
In a separate bowl, beat together eggs, milk, salt, and dry mustard.
Layer bread, sausage, 1 cup of cheese, egg mixture, then the other cup of cheese in a 9x13 baking dish. Cover. Refrigerate overnight. In the morning, take off the cover, place the dish in a cold oven, set temperature to 350 degrees, and bake for 45 minutes.

I put this together last night, and all I had to do this morning was put it in the oven to bake. YUMMY!

Thank You

I would like to thank you for praying for my brother. He will be going home from the hospital this evening. He had a heart catheterization this morning, and the doctors couldn't find any clots or blockages of any kind in his lung or heart. He has had blood clots in his lungs before, and the doctor thought that's what was happening again. His chest pain may be because of the lupus, so he will be going to a rheumatologist about it. Even though he still needs to find out what's wrong, it's nice to have some things ruled out.
I hope you all are doing well. It was a great comfort to me to know that there were people out there I've never met who were praying for my family. God bless you, my friends. :)

Prayer Request

I'd like to ask you to please pray for my brother, Aaron. I talked to my mom earlier, and he is in the hospital with a blood clot in his lung. He's 32, and married with three small children. He's had lupus since he was 18, and has had multiple health struggles through the years. We've nearly lost him several times. He is my only sibling, and it has been very hard to see all the things he's had to suffer through. Thanks for your prayers.

Back on Track!

Well, we were finally able to go to church yesterday! It was so good to be able to get out again after being snowed in for two weeks, missing two Sundays and two mid-week services. I enjoyed seeing everyone and 'catching up' with them.
My daughter, Katie, was able to go back to school today. She was out of school all last week and four days the week before because of all the snow we had.
I was back at work today, too.
It was nice to get a break, but it's also nice to get back to our routine. It just makes everything flow easier.

Our Snowy Winter
