Vacation, Catching Up, and a Recipe

Hi, everyone. I hope you're all doing well.

We were visiting with our families last week. We had a wonderful relaxing time, just what I needed before the busy school year starts again.

We're back home now playing catch-up. You know how it is...catching up on the mail, laundry, bills, e-mail, and whatever else needs attention. I hope to be catching up with your blogs soon too! I've missed seeing what you've been doing.



Here's a recipe for you. I'm sure many of you already know about this wonderful dessert, but for those of you who may not, this is a delicious, very easily made dessert, one of my favorites! Mom always makes it for us in the summertime when we visit. :)

Chocolate Eclair Cake



Ingredients:
box of graham crackers
2 packages instant vanilla pudding
3 cups cold milk
1 8oz. tub whipped topping
1 container of chocolate frosting

Directions:
Mix together pudding and milk, then add the whipped topping. Line a 9x13 rectangle pan with graham crackers. Cover with half of the pudding mixture. Layer again with graham crackers, then the other half of pudding mixture. Layer with graham crackers, then frost. Refrigerate several hours before serving to allow the graham crackers to soften. Keep refrigerated.

  3. That looks so good. I just made something similiar this weekend. I used a 9X13 pan and layered graham crackers at the bottom. Then I put sliced bananas on top. I then put instant pudding on top of that and froze it. Everyone loved it. I am copying your recipe to make soon :)

  8. YAY!!! I'm so glad you found me! Our computer got a bad virus and we lost EVERYTHING! Since I hadn't been blogging I couldn't remember the names of blogs and so hoped that I'd eventually run across some of my old blogging friends! I see Theresa's comment here so I can go say hi to her!

  10. Thanks for the Eclairs! I have had many on Sunday night after church with a glass of milk. Makes the best bed-time snack! No, Mama didn't make them. We lived just around the corner from a bakery for four good years. Mmmmm - I can almost smell the aroma of fresh baking now!

    Megan and Parker came over for dinner tonight, and I made the Chocolate Eclair Cake for dessert! Everyone loved it!! I sent some home with Megan for Ric since he had to work late. Thank you again for sharing the recipe. It was yummy!! :)

  20. Hi Melanie so glad you had a great trip to visit family. I never heard of the dessert but it looks scrumptious. I will try it when I am not on a diet, so far I have lost about 8 lbs not that I was fat but I have cut out junk and desserts from my diet. It's time to get back on my healthy eating plan.
