Gingerbread




I hope you all had a nice Thanksgiving. Ours was very nice. We enjoyed spending time with our families we don't get to see very often. The time just seemed to go by too fast.
Mom knows we all like gingerbread, so she makes some for us every year about this time. I copied her recipe while I was there last week so I could share it with all of you! She always doubles it because we all like it so well. :)

Gingerbread

Ingredients:
1/2 cup vegetable oil
1/2 cup sugar
1 egg
1/2 cup molasses
1 1/2 cups all-purpose flour
3/4 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 cup boiling water

Directions:
Mix oil and sugar together. Add egg and molasses; beat thoroughly. Mix dry ingredients. Add to creamed mixture alternately with water, beating after each addition.
Bake in greased and lightly floured 8x8x2 inch pan at 350 degrees for 35-40 minutes or until done. Serve warm.

Sauce

In saucepan, mix 1 slightly beaten egg yolk, 1/4 cup butter, 1/4 cup water, 2/3 cup brown sugar, and 1/3 cup light corn syrup.
Cook and stir over low heat until thick. Stir before using.
Makes 1 cup.

  5. So glad you had a nice Thanksgiving! This gingerbread looks SO yummy! And it's easy. I think I'll make it at Christmas time, thank you! Can you make the sauce ahead of time then microwave it?

  13. Hi Melanie I am glad you had a wonderful Thanksgiving at home with your mommy. I love my mommy and I am so glad she is close to me here, she lives in Sacramento but it's only about a 25 minute drive. I love this song you have by Karen Carpenter she was my favorite! I also love Elvis and Tom Jones. LOL!
