Springtime!

My daffodils are now blooming! I'm glad I took this picture before all the rain. They look a little sad now.




This is my forsythia bush in the backyard. It's always so pretty every year.


I'll try to post some more pictures when other things start to bloom.

A Dear Friend


Look at what we had for supper tonight



all thanks to a dear sweet jewel of a lady at our church. Every now and then she will make us some lasagna, and even deliver it to our house!

It is so good. Hers and my mom's are my favorites. :)

She brought us the garlic bread, vegetables, and pineapple upside down cake too!

We are so blessed to have such a dear friend. I hope you all have someone as sweet as this too. :)

Teen Challenge

We had a wonderful church service this morning!

Our local Teen Challenge director was our guest. For those of you not familiar with Teen Challenge, it is a Christian organization that helps people with drug and alcohol addictions.

I always look forward to them being our guests. The director usually brings along a few of the people in the program so they can give their testimonies. It is truly awesome to see how God is miraculously and completely changing their lives.

Will Jesus Ever Return?

This is what my husband spoke about in our school's chapel this morning.

People have been asking this question for years.

Knowing this first, that there shall come in the last days scoffers, walking after their own lusts, And saying, Where is the promise of his coming? for since the fathers fell asleep, all things continue as they were from the beginning of the creation.

Yes, one day He will return.

For the Lord himself shall descend from heaven with a shout, with the voice of the archangel, and with the trump of God: and the dead in Christ shall rise first: Then we which are alive and remain shall be caught up together with them in the clouds, to meet the Lord in the air: and so shall we ever be with the Lord.

Greenbrier Salad

Ingredients:
1 cup boiling water
1 pkg. lime Jell-O
1 cup mini marshmallows
1 cup cottage cheese
1 cup crushed pineapple
1 small tub (8oz.) of Cool Whip

How I make it:
Empty the Jell-O package into a medium saucepan. Pour 1 cup of boiling water over Jell-O and stir until dissolved. Wait a minute or so then add the marshmallows. They will dissolve some. The original recipe dissolves the marshmallows completely, but I like to see the marshmallows in there. :)
Pour into a 9x13 glass dish.
Let cool for 10-15 minutes.
Add cottage cheese, pineapple, and Cool Whip. Mix well.
(You don’t have to use a whole tub of Cool Whip. The more you use, of course, the fluffier your salad will be.)
Refrigerate until jelled.

*Options
This is also good with chopped pecans mixed in, and/or sprinkled on top.
I used lime Jell-O this time because it’s green, but it’s good with other flavors too.

This is the usual way to serve it, but I made this one with only 1 cup of Cool Whip so I could use the rest of the Cool Whip to serve it…




this way. I scraped it out of the dish (after it jelled) into a bowl, broke it up, and stirred in the rest of the Cool Whip.



I made this for my daughter to take to school tomorrow for St. Patrick's Day.
It’s an old recipe, but it is so good and easy to make.

Bread Machine Recipe - Plain White


I think the bread machine is such a great invention!

This is the recipe I use for a 1 ½ lb. plain white loaf.

You will need:

3 cups all-purpose flour
1 ¼ tsp. salt
3 Tbsp. sugar
1 cup warm water
¼ cup vegetable oil
1 yeast packet or 2 ¼ tsp. (I use bread machine yeast)

Directions:

Mix the flour, salt, and sugar together.
Put in the oil and water first, the flour mixture second, and the yeast last.

I set my bread machine on basic light, and it runs for 3hrs. 20min.

Our usual Sunday meal is a roast in the crock pot with carrots, potatoes, and onions. That smells great when we walk in the door from church, but when you add in the aroma of fresh-baked bread, oh my goodness, it is wonderful!

Spring is on the Way!

Look at what I saw the other day when I was backing out of my driveway.


If any of my neighbors were watching, they were probably wondering why I was taking a picture of my grass. Oh well. I wasn’t taking a picture of the grass; I was taking a picture of the daffodils peeking through! I’ll try to remember to take another picture of them when they’re blooming.
